702Greens Founder Shaan started the company back in 2022. With a background in agriculture, health and nutrition, his passion for healthy living and sustainable agriculture led him to explore the world of microgreens and sprouts. We caught up with him at the Farm to Table Farmers Market to find out more about the business of sprouts.

Shaan: Microgreens are incredibly nutrient-dense, packed with vitamins, minerals, and antioxidants. They are easy to grow, have a quick turnaround time, and can be used in a variety of dishes to boost nutritional content. Their health benefits and versatility make them an excellent choice for anyone looking to improve their diet.
VWM: What types of microgreens do you grow and what is the process?
Shaan: At 702Greens, we grow a variety of microgreens including radish, broccoli, sunflower, and peas. Our Nutritional Mix is composed of pea, sunflower, broccoli, radish, kale and cabbage microgreens. This hand-crafted mix features the most healthy and flavorful varieties of microgreens allowing you to look, feel and perform at your very best.
The process involves carefully controlled indoor environments where we monitor temperature, humidity, and light to ensure optimal growth. Each type of microgreen has specific needs and requires precise care from planting to harvest. We use organic practices and ensure that our products are fresh, clean, and packed with nutrients.
VWM: How long do microgreens last and where can readers purchase them?
Shaan: Our microgreens stay fresh for about two weeks when stored properly. They should be kept in the refrigerator in a sealed container to maintain their freshness and nutritional value.

VWM: What obstacles have you faced within your business?
Shaan: One of the main challenges has been dealing with extreme weather conditions, which can affect market attendance and overall sales. Additionally, finding reliable staff and managing operational logistics as we grow have been ongoing challenges. Despite these obstacles, we've been able to adapt and find new opportunities for growth and outreach.
VWM: What do you appreciate about having your business?
Shaan: I appreciate the ability to provide fresh, healthy food to our community and the opportunity to educate people about the benefits of microgreens. The positive feedback from customers who notice improvements in their health is incredibly rewarding. Additionally, the flexibility and creativity that come with running my own business are aspects I truly enjoy.

Shaan: Adding microgreens to smoothies boosts their nutritional value and adds a fresh flavor. In salads, microgreens add texture and a burst of flavor. And, in sandwiches and wraps they add a crunchy texture and fresh taste.
